COCONUT TOMATO CHUTNEY

About the Recipe

Simple, Flavourful coconut tomato chutney- a bright and refreshing Indian condiment to use with dosa, chapathi, idli etc. Can be made in 5 minutes flat!

Ingredients

  • 1 cup fresh grated coconut

  • 1 large onion, roughly chopped

  • 2 small deseeded tomatoes, roughly chopped

  • 2 cloves garlic

  • 1 green chilli, deseeded

  • 1 tbsp coconut oil

  • Pink salt to taste


For the Tempering :

  • 15 – 20 mustard seeds

  • 4 – 5 crushed curry leaves

Preparation

  1. Coarsely grind together all the ingredients.

  2. Add oil on a heated iron tawa and add crushed curry leaves and mustard seeds. As the seeds start sputtering, remove from heat and pour in the chutney mixture.

  3. Enjoy this nutty tangy delicacy with dosas, idli or chapati.
