Gluten free cookies (oatmeal cookies)

About the Recipe

Its gluten free, fiber-rich whole grains, good source of protein and packed with vitamins, minerals and antioxidants.

Oat groats are processed in different ways to create either steel-cut, rolled or quick oats, all of which have distinct characteristics.
Rolled Oats are oat groats that have gone through a steaming and flattening process. It is a healthier version when compared to instant oats which has undergone further processing. Less processed any grain is, the healthier it is! Steel cut oats are most closely related to the original, unprocessed oat groat.

Ingredients

  • 1/2 cup raw cashews

  • 1/2 cup pitted wetdates

  • 1/2 cup rolled oats

  • 1/4 virgin coconut oil

  • 1 tablespoon maple syrup

  • 1 teaspoon vanilla extract (optional)

  • A pinch of pink or sea salt

  • 1/4 cup chopped dark chocolate or cocoa powder

Preparation

🍪Place the cashews and dates in the bowl of a food processor. Blend until both are coarsely ground.

🍪Add the rolled oats, maple syrup, vanilla extract, pink salt, and chocolate/cocoa and pulse until the mixture comes together when pressed.

🍪Add the virgin coconut oil and mix well.

🍪Use a tablespoon or small cookie scoop to press the mixture into flat shapes.

🍪Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Place the balls 2 inches apart on cookie sheets.

🍪 Flatten each cookie. Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet.
