Healthy Mash up Soup

About the Recipe

Here is one of the most comfortable cozy soup🍵. Warm, beet-licious, and comforting🤍. This soup is a mash-up of carrot 🥕, tomato 🍅 and beets.

Ingredients

  • 1 big beetroot peeled and diced

  • 6 medium-sized tomatoes diced

  • 2 large-sized carrot peeled and sliced

  • 2 garlic cloves

  • Himalayan salt to tasts

  • A spoon of ghee

  • 2 cups or 500 ml of water

  • Black pepper, roast d cumin powder and chilli flakes for seasoning


  • For garnish:

  • Dried oregano

  • Chopped raw spring onion

Preparation

🌿In the pressure cooker, add beets, tomato, carrots, garlic and salt.

🌿Add water and let it pressure cook. 4-5 whistles


🌿Open the lid, and blend the cooked veggies until puree.


🌿Strain it through a metal sieve


🌿In a pan, add a spoon of ghee. Add black pepper and cumin powder


🌿Add the strained soup and let it boil until it’s thick. Add more salt and pepper, if needed


Serve hot with some spring onion and dried oregano.
