About the Recipe
Here is one of the most comfortable cozy soup🍵. Warm, beet-licious, and comforting🤍. This soup is a mash-up of carrot 🥕, tomato 🍅 and beets.
1 big beetroot peeled and diced
6 medium-sized tomatoes diced
2 large-sized carrot peeled and sliced
2 garlic cloves
Himalayan salt to tasts
A spoon of ghee
2 cups or 500 ml of water
Black pepper, roast d cumin powder and chilli flakes for seasoning
Chopped raw spring onion
🌿In the pressure cooker, add beets, tomato, carrots, garlic and salt.
🌿Add water and let it pressure cook. 4-5 whistles
🌿Open the lid, and blend the cooked veggies until puree.
🌿Strain it through a metal sieve
🌿In a pan, add a spoon of ghee. Add black pepper and cumin powder
🌿Add the strained soup and let it boil until it’s thick. Add more salt and pepper, if needed
Serve hot with some spring onion and dried oregano.
