Ingredients

๐ŸŽ€Red Rice Idiyappam

  • 1 cup red rice flour

  • 1 cup water

  • pinch of rock salt

  • 1 tsp cold pressed oil.


๐ŸŽ€Mangalore bean stew

  • Mangalore beans

  • Rock salt

  • Oil

  • Crushed garlic.

  • Dry red chillies

  • Curry leaves

  • 1 tsp rice flour

  • Freshly chopped coriander

  • Grated coconut

Preparation

Red Rice Idiyappam

๐ŸŽ€Dry roast 1 cup red rice flour on low heat.

๐ŸŽ€Then boil 1 cup water with a pinch of rock salt and 1 tsp coldpressed oil. As it's simmering, toss in the flour and mix well and cook covered for under a min.

๐ŸŽ€Then knead the mixture until smooth. This needs to be done while it's still hot.

๐ŸŽ€Shape like a log and pass it through a kitchen press using the sev attachment.

๐ŸŽ€ Do this on an oiled plate or idli mould.

Steam for 10 mins. Voila!


Mangalore bean stew

๐ŸŽ€Soak Mangalore beans for 7-8 hrs or overnight.

๐ŸŽ€Pressure cook them with rock salt. This can also be done without pressure cooking but will take much longer.

๐ŸŽ€ Heat oil in a Kadai and add lots of crushed garlic. Let it brown a bit.

๐ŸŽ€ Then add mustard, cumin seeds and hing.

๐ŸŽ€ Mix well and add dry red chillies and curry leaves ๐ŸŒฟ

๐ŸŽ€Toss in the cooked beans with the water they're cooked in. Add more water, if needed. ๐ŸŽ€Make a slurry with 1 tsp rice flour and add that for a bit of thickness.

๐ŸŽ€ Add rock salt as needed ๐Ÿง‚

๐ŸŽ€Once off the flame, sprinkle freshly chopped coriander ๐Ÿ€and grated coconut ๐Ÿฅฅ lavishly
