About the Recipe
Sweet potatoes are sweet, starchy root vegetables that are grown worldwide . These are rich in beta-carotene and anthocyanins, antioxidants that may help prevent vision loss and improve eye health. It helps support the immune system and gut health. It also maintains blood sugar level, improving fertility by regulating the menstrual cycle. It may improve cervical fluids & follicle development.
200g potatoes boiled & grated
300g sweet potatoes boiled & grated
1 onion, chopped into fine pieces
A handful cabbage, chopped
1 cup Red & yellow bell pepper, chopped
1 tbsp fresh parsley, minced
½ cup Jowar flour
½ tsp baking powder
½ tsp freshly ground black pepper
3-4 tbsp olive oil / coconut oil
Salt to taste
Squeeze out the excess liquids from the grated potatoes using your hands. Pour out the liquid and place potatoes in the bowl. Add chopped onion, bell pepper, cabbage, parsley, Jowar flour, baking powder, salt and pepper and mix well.
Take a medium sized skillet, add 3 tbsp olive oil & spread nicely with a brush. On medium heat, scoop a heaped tablespoon of the batter onto a large skillet and flatten it. Cook for about 5 minutes each side, until golden brown on both sides.
Serve hot with garlic / mint chutney
